Transferring Mail Accounts with no cPanel

I just got the Discovery Plan, only to discover that it doesn't quite have enough juice to move everything from a shared account over automatically. Without spending almost what the Freedom Plan costs you don't get cPanel, and apparently cPanel makes these sorts of moves painless.

I can't really justify the cost of the Freedom plan for my toy sites, so I'm attempting to do this manually, but I suck at the email server stuff. I'll set up MySQL, Apache, etc., all day long, but mail servers simply hurt my head. It wouldn't be so bad, but I'm multihosting, so I'm not even quite sure where to start. I'm guessing that on the VPS I can have multiple MX records and "real" email accounts instead of aliases.

Can someone post a strategy for moving my email accounts and aliases for multihosted domains from my old server to my VPS, or maybe point me to some helpful sites on the subject?

If you contact the support team they will probably be able to do this for you, if not they will certainly tell you where to get the info from, they are quite helpful when approached the right way I have found.

I always have great luck with the support, they are amazing. For this one they suggested paying for the upgrade to get cPanel. I thought I would ask here before pestering them for hints on doing it manually. I know they're busy.
