Changing my server hostanme/domain

Ive just had a new VPS account setup... Im not able to use the domain the server is hosted on, can I change it.. or would I have to cancel this account, and setup a new one for the alternative domain...??

Open a support ticket and ask for the change. Support can do it for you without having to recreate your entire account.
