My domain is with another company and I wanted to change the MX records so I can do all my email stuff here on my jag vps. Would the "Record 1:" and "Record 2:" be my servers ip address?

Its usually recommended that MX record should be pointing to a fully qualified domain name so if you want two MX records then what you can do is setup two DNS records as:
mx1.yourdomain.com xx.xx.xx.xx
mx2.yourdomain.com yy.yy.yy.yy
where xx's and yy's should be the IP addresses of the server where you want the emails to be handled. BTW, if you want emails to be handled only to your VPS then you don't need two MX records.
You may also have to add the domain to your VPS mailserver configuration files (Depending upon mailserver used) so that the mailserver treats it as a local domain.
