Question about DNS and mail setup for VPS accounts

I currently don't use my VPS servers for sending and receiving email. Is the best way to not get my mailboxes filled up to set each domain as a "Remote Mail Exchanger" in the domain's DNS Zone? Here is how I do it in WHM

    I go to:
"DNS Functions > Edit DNS Zone > SELECT DOMAIN > Select Remote Mail Exchanger"

Will this keep my mailboxes from receiving email? Including spam? Also, is this secure?

Finally, is there a better way to set this up or am I doing it right?

Setting Remote Mail Exchanger is only going to ensure no emails are delivered locally but to the remote mail server defined in the MX record of the DNS zone. You will have to add a remote MX record pointing to another server in this case so that mails are delivered to the remote server. Are you handling your emails elsewhere or you do not want your domains to have mailing capability at all.

Do you want to disable mailing ability of your domains, or you just want the emails not to be handled on the VPS and elsewhere.

I handle the mail capability somewhere else. I've pointed DNS MX entries to a remote service where I handle my mails.

I don't want the VPS to receive any emails at all. Including spam emails which would go into any catch-all addresses setup on the VPS server.

With the information provided above am I doing it correctly by setting each domain's DNS as a "Remote Mail Exchanger"?

If your domains' MX records are pointing elsewhere, there is little chance of those domains receiving emails on your hosting server unless mails are generated on the same server by other domains or via scripts. In that case, mail server will direct those emails to the remote mail server which is something you should have. If you want to disable emails completely, you can block incoming SMTP ports 25 and 465 on the server.
