    This is clear, but which is better: addon domain via cPanel or extra account via WHM?

    That depends if you want a new cpanel for it or just a new domain under the same cpanel.

    I have generally added new CPanels. But there are pros and cons of course.

    Having one account makes things MUCH easier.
    You can do things at the OS level logged in as your main user across all accounts. You can't do that if you've created multiple accounts unless you are comfortable doing everything as root.

    If you want to create and sell off domains, creating them as CPanel accounts makes it easier. I have a limited WHM but there may be a way to package up an addon domain to do this.

    There are issues about separate IPs and SSL certs.

    But the biggest plus is security. If one of your domains gets hacked, keeping them separate probably protects the others.
