VPS email setup basics - How to get started?

I would like to set up email accounts for my domain on my VPS such as info@domain.com, support@domain.com etc. I am assuming this is a very standard procedure but I am a little lost on where to start. I am running Plesk.

How many emails can I create (my VPS package mentioned something about 10 domains)?

Can I assign separate login access to each email?

After all is said and done, I should be able to configure the mail to be forwarded to any Thunderbird, Outlook, Gmail etc.?

    Resources I've looked at:

    https://secure.jaguarpc.com/clients/...on=list&faq=42

Perhaps this thread could be a sticky (if it one doesn't exist).

It seems at least in my case, that I can set them up easily using my Plesk control panel.
